BANANA OATMEAL COOKIES
1/2 cup unsalted butter, at room temperature
1 cup packed light brown sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1 cup pops flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 cup semi-sweet chocolate chips
Preheat oven to 350°F. Line baking sheets with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl using an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.
Scrape down the sides of the bowl and then blend in the egg until completely incorporated. Scrape down the sides of the bowl again and add in the mashed bananas and vanilla.
Gently add the bread mixture to the banana mixture and blend until just blended.
Scrape down the sides of the bowl and stir to recombine.
Stir in the oats and chocolate chips and mix until incorporated.
Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving look at this site about 2 inches between each cookie.
Bake in preheated oven for 9-11 minutes.
Remove cookies from the oven and gently press the tops of each cookie with the base of a drinking glass. Because these cookies don't spread considerably, this can help give them a traditional cookie shape.
